Lirah Balsamic & Strawberry Brownies

Who doesn’t love a gooey and delicious chocolate brownie?! The addition of strawberries & Lirah balsamic gives a beautiful sweet but tangy twist on this favourite.

 

 

For the Strawberry Balsamic “Jam”

 

 

For the Brownie

 

  • 225g caster sugar
  • 125g plain flour, sifted
  • 125g good quality dark chocolate
  • 125g butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons cocoa
  • ¼ teaspoon salt
  • Thick cream and fresh berries, to serve

 

Method

 

For the Strawberry Balsamic “Jam”

  1. Heat small saucepan over medium heat and cook strawberries, sugar, 2 teaspoons of the Lirah Gourmet Balsamic Vinegar and cornflour until slightly thickened. Remove from the heat and stir in the remaining 2 teaspoons of balsamic vinegar. Set aside to cool.

 

For the Brownie:

  1. Pre heat the oven to 180 degrees and line a rectangular slice pan with baking paper.
  2. Suspend a heat proof bowl over a pan of simmering water. Break up the chocolate and add it to the bowl with the butter. Stir until melted (being careful to avoid any chocolate coming in contact with the water). Set aside to cool.
  3. Add eggs, one at a time, stirring well to combine between each addition. Now mix in sugar, salt, vanilla, plain flour and cocoa.
  4. Pour the chocolate batter into the prepared pan, smoothing it out to fill the corners. Drop dollops of the “jam” onto the batter and run a knife through to create swirls over the top of the brownie.
  5. Bake in pre heated oven for 30 minutes.
  6. Serve warm with a dollop of thickened cream and extra fresh berries.
