This delicious marinade works well with any kind of meat and is also great for seafood. Allow plenty of time to marinate, preferably overnight, to allow the flavours to fully develop. The recipe will make enough for approx. 500g – 1kg protein.

 

Ingredients

 

  • 3 tablespoons olive oil
  • 2 tablespoons Lirah Caramelised Lemongrass Balsamic
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon chilli sauce (optional)
  • 3 stalks lemongrass, white part only, thinly sliced
  • 2 cloves garlic, crushed
  • ¼ teaspoon salt
  • 500g – 1kg protein of choice (chicken, beef, pork, fish or tofu)

 

Method

 

  1. Place lemongrass, garlic and chilli, if using, in a small food processor and blend until a fine paste.
  2. Add Lirah Caramelised Lemongrass Balsamic and all other ingredients then process until well combined.
  3. Allow marinade to sit for a few minutes and then add, with your preferred protein, to a zip-lock bag. For best results allow to marinate for several hours, or overnight, to allow flavours to develop.
  4. Grill, stir fry or BBQ the marinated protein your preferred way. Serve with an Asian noodle salad dressed with extra Lirah Caramelised Lemongrass Balsamic.
