Lirah Lemongrass Salmon

This flavoursome lemongrass marinated salmon is a quick, healthy & tasty dish to get on the table for a mid-week dinner. Cooked at a low temperature you will end up with succulent and perfectly cooked fish.




  • 1 tablespoon dark soy sauce
  • 1 tablespoon Lirah Caramelised Lemongrass Balsamic
  • ¼ cup rice vinegar
  • 1 stalk lemongrass, finely sliced
  • 2 shallots, finely sliced
  • 1 teaspoon fresh ginger, finely grated
  • 4 fresh salmon fillets, skin on
  • 2 tablespoons honey
  • Fresh coriander, roughly chopped, to garnish
  • Rice and/or vegetable noodles, to serve




    1. Preheat oven to 140 degrees.
    2. Combine soy sauce, Lirah Caramelised Lemongrass Balsamic & rice vinegar in a small bowl. Reserve a tablespoon in a separate dish and set it aside for the glaze.
    3. Add the lemongrass, shallots and ginger to the remaining marinade and whisk together.
    4. Place the salmon in a baking dish, skin-side down, and cut a few shallow slits in the thickest part of the fillets (to allow marinade to penetrate). Pour over marinade and refrigerate for approx. 20 minutes.
    5. Bake approx. 25-35 minutes until cooked to your liking. Salmon should flake easily with a fork.
    6. While the salmon is cooking make your glaze. Combine the honey with the reserved tablespoon of soy sauce/vinegar mix.
    7. When salmon is cooked remove it from the oven, turn on your grill and season fish with salt & pepper. Place under the grill for approx. 2 minutes to give it some nice colour.
    8. Serve immediately with rice or vegetable noodles, drizzled with the honey glaze and sprinkle with fresh coriander.
