Pan Roasted Fish with Green Chilli, Garlic & Lirah Aged Balsamic

This gorgeous fish dish, crispy on the outside and soft on the inside, makes a lovely light meal when served with a crisp side salad.




  • 1kg firm white fish fillets, of choice
  • 8 green chillies
  • 10 cloves garlic, peeled
  • 3-4 tablespoons Liarh Gourmet Aged Balsamic
  • 1 tablespoon dried basil
  • Sea salt and freshly ground black pepper, to taste




  1. Place the chillies and garlic in a mortar and pestle and smash until combined. Mix in basil, Lirah Gourmet Aged Balsamic, salt and pepper.
  2. Rub the marinade over the fish fillets and refrigerate for at least an hour for flavours to develop.
  3. Pre heat oven to 180 degrees.
  4. Heat olive oil in a heavy-based, oven-safe, saucepan. Cook each side of the fish for a 1-2 minutes then place the pan in the oven and continue cooking for approx. 5-7 minutes until cooked through.
  5. Serve with a fresh green side salad and home-made fries for a healthier version of “fish ‘n chips”.
