Pan Roasted Fish with Green Chilli, Garlic & Lirah Aged Balsamic

This gorgeous fish dish, crispy on the outside and soft on the inside, makes a lovely light meal when served with a crisp side salad.
Ingredients
- 1kg firm white fish fillets, of choice
- 8 green chillies
- 10 cloves garlic, peeled
- 3-4 tablespoons Liarh Gourmet Aged Balsamic
- 1 tablespoon dried basil
- Sea salt and freshly ground black pepper, to taste
Method
- Place the chillies and garlic in a mortar and pestle and smash until combined. Mix in basil, Lirah Gourmet Aged Balsamic, salt and pepper.
- Rub the marinade over the fish fillets and refrigerate for at least an hour for flavours to develop.
- Pre heat oven to 180 degrees.
- Heat olive oil in a heavy-based, oven-safe, saucepan. Cook each side of the fish for a 1-2 minutes then place the pan in the oven and continue cooking for approx. 5-7 minutes until cooked through.
- Serve with a fresh green side salad and home-made fries for a healthier version of “fish ‘n chips”.
