Sweet Verjus-Pickled Strawberries

This quick and easy recipe is a take on macerated strawberries, but uses our Lirah Grand Reserve Chardonnay Verjus for a little extra je ne sais quoi.  Perfect for pancakes, pavlova, other desserts or just to eat as they are.


  • 1 tsp peppercorns (pink)
  • 1 whole orange zest
  • 1 whole vanilla bean (split)
  • ½ cup water
  • ½ cup caster sugar
  • ¾ cup Lirah Grand Reserve Chardonnay Verjus
  • 500 g strawberries (hulled and quartered)



Pack the strawberries into a large jar.  Combine the Verjus, sugar, water, vanilla, orange rind and pink peppercorns in a small saucepan. Bring to the boil, stirring occasionally then set mixture aside to cool for 10 minutes. Pour over the strawberries, seal, and keep in the fridge for up to one week.
