Tomato Bruschetta with Goats Cheese & Lirah Caramelised Balsamic

There are some flavours that were just meant to go together and one such combination is tomato, garlic, basil and olive oil. Serve this on top of toasted sourdough, drizzled with Lirah Caramelised Classic Balsamic and you have the perfect breakfast, after-work snack or appetiser.

 

 

Topping Ingredients

 

  • 4-5 red-ripe Roma Tomatoes, diced
  • 200g goats cheese
  • ¼ red onion, peeled and finely diced
  • 10 fresh basil leaves, sliced
  • 2 tablespoons good quality olive oil
  • Sea salt and freshly ground black pepper, to taste

Method

 

  1. To make the tomato topping: Gently combine tomatoes, onion, basil and olive oil with salt and pepper, to taste. If you have time, place in the fridge for at least an hour for flavours to develop.
  2. To toast the bread: Preheat oven to 180 degrees. Brush each side of the bread with olive oil and place on a baking tray cooking until a light, golden brown approx. 5-10 minutes.
  3. To assemble: Arrange toasted bread slices over a serving platter, spread lightly with goats cheese and top each with a spoonful of tomato mixture. Drizzle over Lirah Caramelised Classic Balsamic and serve immediately so as to not lose the “crunch” of the bread.
