Juicy red-ripe strawberries are the star of this Summery salad. Combined with the saltiness of feta cheese and a little sweetness from the Caramelised Apple Dressing your family will be coming back for more!
Ingredients:
- 900g strawberries, hulled and cut to your preferred size
- 500g feta, crumbled
- 6 cups baby spinach or rocket
- 12 sprigs fresh mint
- 3/4 cup walnuts, toasted and halved
Dressing:
- 6 tablespoons Lirah Caramelised Apple Balsamic
3 tablespoons olive oil
Salt & cracked black pepper, to taste
Method
- Whisk dressing ingredients together and set aside.
- Place strawberries, baby spinach, feta, mint and toasted walnuts in a bowl and toss gently to combine.
- Drizzle over Caramelised Apple Dressing and serve immediately.
