They say breakfast is the most important meal of the day and this is an easy, delicious & different way to serve up your eggs and get your day off to a great, healthy start.
Ingredients:
- 4 eggs
- 2 teaspoons olive oil
- 400g can chopped tomatoes
- 2 teaspoons sugar
- 2 tablespoons Lirah Caramelised Garlic Balsamic
- 100g baby spinach (or other greens of choice)
- Fresh basil leaves
- Salt and freshly ground black pepper, to taste
- Toasted sourdough bread
Method
- Heat a small-medium, non-stick frying pan over high heat.
- Add the olive oil and once heated add your tomatoes. Stir in sugar to dissolve and cook for 2-3 minutes until the tomatoes start to bubble.
- Crack your eggs into the tomato mixture (do not stir) and let them sit for 10 minutes. Reduce the heat on stove top so that the tomatoes and eggs simmer away steadily.
- Once eggs are cooked to your liking they’re ready to serve. The trickiest part is now getting the eggs and tomatoes to your plate! Once there serve with the spinach, basil and toasted sourdough. Season will with salt & pepper and drizzle all over with Lirah Caramelised Garlic Balsamic.
